I stumbled into a killer lunch!

I had some leftover quinoa in the fridge from last night's dinner of sausages and carrots and I mixed it with some cold chicken, 1/2 an avocado diced up, a Tablespoon of full fat plain greek yogurt, dried onion seasoning and some sea salt until it was super creamy from the 'cado breaking down. I drizzled some farmer's market balsamic vinegar that pours like a syrup and away I went...straight to heaven. I did, however, realize that some diced roams would have been super in it, too.

Welcome, Quinoa, as a permanent fixture in my fridge. We are so happy to have you! You can take a seat by the avocados. :)
