Banana bread like my Momma's without all the crap!

No Added Sugar, No Grains, Easy and Amazing Banana Bread...

There are only two Paleo recipes I haven't had to change a measurement in or revamp the entire thing to make it feel and taste to my liking. This is one of those.  The only thing that seems to be different is coking time, but let's face it, that doesn't count. Amazing Paleo Banana Bread

Makes 1 loaf or roughly 1 1/2 dozen muffins filled 3/4 full

Ingredients:
4 very ripe bananas, mashed (3 if they are very large, too wet, otherwise)
1/3 cup coconut oil or grass-fed butter, melted
4 free-range eggs
1tsp vanilla (I use double fold(strength))
1 ½ tsp cinnamon
½ cup organic coconut flour (do not substitute another flour – it will not work)
1 heaping tsp baking soda
¼ tsp salt

optional add-ins: 1/3 cup dark chocolate chips, walnuts, pecans, slivered almonds, raisins, etc.

DIRECTIONS:

Preheat the oven to 350 degrees. Throw everything together in a medium bowl and mix until combined. Pour into a lightly greased (use coconut oil or butter for greasing) bread pan and bake for about 45 50-60 minutes or until center is set and top is golden. Enjoy! These also make great regular sized muffins. Bake at 340˚F for about 40 minutes, check at 30 minutes, as muffins can dry out. *If you find that your bread did not cook through in the middle, stick a few toothpicks through the piece you sliced off in through to the loaf and pop that baby back in for another 7-10 minutes.

 *Your bananas should be extremely brown, almost to the point when you would throw them away or freeze them. If they are not overly ripe, your bread will not be as sweet and probably not taste as good. If you are using non-ripe bananas, you should add about a 1/3 cup of maple syrup to the batter.

I stumbled into a killer lunch!

I had some leftover quinoa in the fridge from last night's dinner of sausages and carrots and I mixed it with some cold chicken, 1/2 an avocado diced up, a Tablespoon of full fat plain greek yogurt, dried onion seasoning and some sea salt until it was super creamy from the 'cado breaking down. I drizzled some farmer's market balsamic vinegar that pours like a syrup and away I went...straight to heaven. I did, however, realize that some diced roams would have been super in it, too.

Welcome, Quinoa, as a permanent fixture in my fridge. We are so happy to have you! You can take a seat by the avocados. :)

The beginning...

I've started up here with a blog about my experience in becoming a Paleo eater. I realized that I was collecting a bunch of great looking recipes over on FB and that many of them just weren't turning out. I purchase the, at times very expensive, ingredients and things don't always go my way. I thought I might spare a few people I know from having to go through the needless expense and frustration by posting some of my results here and leaving it open for discussion and reworking. There are so many darn ways to skin a cat, you know? Well, of course you shouldn't know of a single way to do that...that's gross, but you get the gist.

I have about 5 or so recipes I have used and had success the first time, picked apart and reworked to satisfaction, or just plain ripped out of my notebook and added to the recycle bin. My plan is to do at least one every week. I happened to do 3 yesterday and 2 actually worked out and are a couple of super favorites already! I hope that my writing skills aren't too terribly dry and that these posts are not only informative, but interesting. I like interesting! So let's get to it, shall we?...
